Beef short ribs — footy food

Happy Queensland Day. Queensland is 165 years old today and tonight Queensland plays NSW in the women’s state of origin series. I’ll be screaming at the TV and the fat from these beef short ribs will lubricate my throat.

Last night the Mighty XXXX Maroons defeated the NSW Blues 38:10.

Beef short ribs

In Australia, beef short ribs are cut from the chuck or plate primal cuts of the cattle [19]. They are usually sold in rectangle blocks, sometimes more square depending on the width of the bone [1]. They are also sometimes sold as a rack rather than pre-cut individual pieces [1].

Beef short ribs are known by different names in various countries. They may be referred to as crosscut ribs, Eastern European-style ribs, Hawaiian-style ribs, Jewish ribs, Korean-style ribs, or “kosher ribs” [5] [1].

Beef short ribs are known for their rich flavour, tender texture, and high fat content, which makes them perfect for slow cooking or smoking [1]. They are best cooked low and slow, either by smoking, braising, or a mix of the two [1]. They are beefy, moist, and full of flavour, as well as being relatively easy to cook and get right [1].

Beef short ribs are high in protein and contain various vitamins and minerals [8]. They contain all essential amino acids and are low in carbohydrates [6]. However, they are heavy in fat, despite high protein and minerals, including vitamin B-12 [8]. More than 42 grams of total fat and 18 grams of saturated fat are included in a 100 grams meal [6]. They also contain Iron, which is important for red blood cell production, and Zinc, which supports immune function and wound healing [9].

Ingredients

  • Beef short ribs.
  • Beef broth.
  • Salt
  • Egg
  • Butter

Equipment

  • Slow cooker
  • Frypan

Instructions

  1. Unwrap the meat.
  2. Put the meat into the slow cooker.
  3. Add the meat broth and some salt.
  4. Cook for 8 hours.
  5. Remove the meat from the slow cooker.
  6. Remove the ribs.
  7. Refrigerate the meat and the broth.

Beef short rib meat and egg.

  1. Slice some beef short rib meat and put it into a frypan with a few tablespoons of beef broth.
  2. Put the frypan on a hob and heat until the broth begins to simmer.
  3. Press down on the meat with a wooden spoon to break up the muscle fibres.
  4. When the water has evaporated, turn the heat off.
  5. Transfer the meat to a bowl.
  6. Add some butter to the frypan and fry an egg.
  7. Place the egg atop the beef short rib meat.
  8. Pierce the yolk sac and allow the yolk to ooze over the meat like a sauce.
