Lamb chops — Footy food

Queensland and New South Wales will play game one of this year’s State of Origin series tonight. I ate lamb chops to get me ready to watch the game. I hope Billy’s Boys, known as the Mighty XXXX Maroons, defeat the NSW Blues.

Lamb loin chops are like the “T-bone steak” of lamb. This cut is popular in Australia [1] [2]. They are taken from the waist of the animal, so they do not contain the long rib bone you see on a lamb cutlet [1]. Appearance-wise, they almost look like mini-T-bone steaks [1]. They are leaner than lamb rib but are equally flavourful [8].

Regarding their cooking and eating characteristics, they are tender and savoury [1]. They do well with hot, fast, dry cooking methods, such as grilling [3]. The bone adds flavour and helps make the chops harder to overcook as the meat stays pink nearer the bone [6]. Some people say that lamb loin chops are best when cooked medium when the internal temperature of the meat reaches 63 °C [9].

As for the nutritional components, a small lamb loin chop (approximately 100 grams, with bone, raw, yield after cooking, bone removed) contains about 222 calories. The macronutrient breakdown is 68% fat, 0% carbs, and 32% protein [14]. It is an excellent source of high-quality protein. It is also rich in essential nutrients, including B vitamins (especially B12), zinc, iron, and selenium [15].

In terms of international terminology, lamb loin chops are referred to by the same name in many English-speaking countries. However, the terminology can vary based on regional dialects and culinary traditions.

Regarding the current prices for lamb loin chops per kilogram, as of the latest data available:

  • In Australia, the price at Woolworths is AUD 22 per kilogram [18], at Coles it is AUD 20 per kilogram [20].
  • The average price in the UK (United Kingdom) is GBP 16.88 per kilogram [10].

Equipment

Instructions

  1. Unwrap the meat and place it on a rack.
  2. Refrigerate the meat uncovered on the rack overnight. This will dry the surface of the meat.
  3. Cook in the air fryer at 120 °C for 25 minutes.
  4. Allow the meat to rest for 5 minutes.
  5. Cut the meat from the bone into bite-sized pieces.
  6. Enjoy the fatty goodness of the lamb loin chop.
