Bone-in ribeye

Yesterday I went to Baa Moo Oink and bought a couple of steaks. One was this bone-in ribeye.

Ingredients

  • Bone-in ribeye steak
  • Salt

Equipment

  • Gas torch
  • Wireless thermometer
  • Oven

Instructions

  1. Unwrap the steak and place it on a rack in the refrigerator overnight.
  2. Sear the surface of the steak with a gas torch.
  3. Cook in an oven at 120 °C until the internal temperature reaches 58 °C.
  4. Allow the meat to rest for 5 minutes.
  5. Slice the steak and enjoy with flaky salt.
