Wagyu scotch fillet steak

I bought this wagyu scotch fillet steak from Baa Moo Oink on Friday.

Ingredients

  • Wagyu scotch fillet steak
  • Salt
  • Butter

Equipment

  • Precision cooker
  • Water bath
  • Vacuum chamber
  • Gas torch

Instructions

  1. Unwrap the meat and place it on a rack and refrigerate uncovered overnight.
  2. Put the steak into a vacuum bag and seal the bag.
  3. Heat the water bath to 57 °C.
  4. Cook the steak for 2 hours.
  5. Remove the steak from the bag.
  6. Dry the surfaces of the meat with absorbent paper towel.
  7. Sear the steak with a gas torch.
  8. Add some butter to melt on the steak.
  9. Slice the steak and season with flaky salt.
