I bought this wagyu scotch fillet steak from Baa Moo Oink on Friday.
Ingredients
- Wagyu scotch fillet steak
- Salt
- Butter
Equipment
- Precision cooker
- Water bath
- Vacuum chamber
- Gas torch
Instructions
- Unwrap the meat and place it on a rack and refrigerate uncovered overnight.
- Put the steak into a vacuum bag and seal the bag.
- Heat the water bath to 57 °C.
- Cook the steak for 2 hours.
- Remove the steak from the bag.
- Dry the surfaces of the meat with absorbent paper towel.
- Sear the steak with a gas torch.
- Add some butter to melt on the steak.
- Slice the steak and season with flaky salt.
