Lamb forequarter chops

Tonight I had two lamb forequarter chops.

Ingredients

  • Lamb forequarter chops.
  • Salt

Equipment

  • Air fryer

Instructions

  1. Unwrap the meat and place it on a rack.
  2. Refrigerate the meat uncovered overnight.
  3. Cook in an air fryer for 25 minutes at 120 °C.
  4. Rest the meat for 5 minutes.
  5. Slice the meat.

    I’ve never fridge-dried a steak before. I’ll have to try that. I’ve also never had or heard of forequarter chops! I’ll have to check that out.
