Beef short ribs from Coles and Woolworths

I recently cooked a large portion of beef short ribs. One packet was from Coles, and the other was from Woolworths. There was no specific reason for this. I wanted a large portion to prepare enough meals for a few weeks.

I am travelling soon and will be busy with work. Preparing some meals and freezing them will make life easier in the coming weeks.

Ingredients

  • Beef short rib fingers — Coles.
  • Beef short ribs — Woolworths.
  • Salt
  • Water

Equipment

  • Slow cooker

Instructions

  1. Unwrap the meat and place the ribs into the cooking vessel.
  2. Add some salt and water.
  3. Turn on the slow cooker and cook for about 8 hours.
  4. Remove the meat and bones from the slow cooker.
  5. Separate the meat from the bones.
  6. Discard the bones.
  7. Pour the cooking liquor through a sieve into a bowl and set aside in the refrigerator.
  8. Refrigerate the meat.
  9. Dice the cold meat and put portions into vacuum bags, some of the gelatinous cooking liquor, and a little beef fat or butter.
  10. Seal the bags and place them in the freezer.

To reheat the frozen meal

Saucepan and boiling water

  1. Allow the bag to thaw in the refrigerator overnight.
  2. Boil a saucepan of water.
  3. Place the bag in the simmering water for 5 minutes.
  4. Open the bag and mix the contents in a bowl.

Heated water bath

  1. Allow the bag to thaw in the refrigerator overnight.
  2. Heat a water bath with a precision cooker to about 60 °C and reheat the bag for 30 minutes.
  3. Open the bag and mix the contents into a bowl.

The frypan

  1. Allow the bag to thaw in the refrigerator overnight.
  2. Put the bag’s contents into a frypan and heat on the stovetop.
  3. Mix the contents into a bowl.

Eat the meat cold

  1. Allow the bag to thaw in the refrigerator overnight.
  2. Eat the diced beef short rib meat cold with some cheese.

Beef short rib meat is wonderfully fatty. With a little salt, the meat can be eaten cold as a snack along with a small amount of cheese.

When reheated, a small amount is enough to satisfy my appetite. If I have it for lunch, I have no hunger craving until tea time.

    The only problem with restaurant popularity is the associated price rises in supermarkets. I remember when ribs were cheap.

    ‘I wanted a large portion to prepare enough meals for a few weeks.’ Honestly this is what I always think when I am shopping for meats. Like you, sometimes I want to have enough meat to freeze and last a few weeks. Just makes it easier to cook and not shop all the time. I will say that the bigger steak portions I buy in bulk, usually the quality takes a bit of a hit. I love my rib eye and porterhouse, and wish they come in bigger portions over here. These cuts don’t come cheap. Wish they did 😄

    Hi Mabel,
    Yes, a better quality product will cost a lot more. My butcher sells large bulk pieces of scotch fillet or porterhouse ranging from $20/kg to $80/kg. The cheaper meat is best cooked slowly and with low heat. 😊

    I love beef short rib!! I think it’s my favourite beef cut. That looks so good! Did you find much difference between the two stores’ short rib?

    Looks great, Gary! We have Coles in the U.S., but they don’t sell food. They sell, like, appliances and furniture. We no longer have Woolworths, but when we did, they were, like, what we used to call a “five and dime.” They sold candy, but certainly not steaks!
