I recently cooked a large portion of beef short ribs. One packet was from Coles, and the other was from Woolworths. There was no specific reason for this. I wanted a large portion to prepare enough meals for a few weeks.
I am travelling soon and will be busy with work. Preparing some meals and freezing them will make life easier in the coming weeks.
Ingredients
- Beef short rib fingers — Coles.
- Beef short ribs — Woolworths.
- Salt
- Water
Equipment
- Slow cooker
Instructions
- Unwrap the meat and place the ribs into the cooking vessel.
- Add some salt and water.
- Turn on the slow cooker and cook for about 8 hours.
- Remove the meat and bones from the slow cooker.
- Separate the meat from the bones.
- Discard the bones.
- Pour the cooking liquor through a sieve into a bowl and set aside in the refrigerator.
- Refrigerate the meat.
- Dice the cold meat and put portions into vacuum bags, some of the gelatinous cooking liquor, and a little beef fat or butter.
- Seal the bags and place them in the freezer.
To reheat the frozen meal
Saucepan and boiling water
- Allow the bag to thaw in the refrigerator overnight.
- Boil a saucepan of water.
- Place the bag in the simmering water for 5 minutes.
- Open the bag and mix the contents in a bowl.
Heated water bath
- Allow the bag to thaw in the refrigerator overnight.
- Heat a water bath with a precision cooker to about 60 °C and reheat the bag for 30 minutes.
- Open the bag and mix the contents into a bowl.
The frypan
- Allow the bag to thaw in the refrigerator overnight.
- Put the bag’s contents into a frypan and heat on the stovetop.
- Mix the contents into a bowl.
Eat the meat cold
- Allow the bag to thaw in the refrigerator overnight.
- Eat the diced beef short rib meat cold with some cheese.

After thoughts
Beef short rib meat is wonderfully fatty. With a little salt, the meat can be eaten cold as a snack along with a small amount of cheese.
When reheated, a small amount is enough to satisfy my appetite. If I have it for lunch, I have no hunger craving until tea time.
