This was a nice lump of rump.
I bought it from the supermarket. It was relatively economical at $AUD20/kg.
I cooked it on the weekend and kept it in the refrigerator. I reheated the steak tonight and ate it.
Ingredients
- Rump steak
- Salt
- Butter
Equipment
- Water bath
- Precision cooker
- Gas torch
Instructions
- Unwrap the steak.
- Season the steak with salt.
- Put the steak on a rack uncovered overnight in the refrigerator.
- Put the steak into a plastic bag and seal under a vacuum.
- Heat the water bath to 57 °C and then add the steak. Cook the steak for 2 hours.
- Removed the bagged steak from the water bath and place it in the refrigerator until it’s ready for a meal.
- About an hour before tea time remove the bagged steak from the refrigerator.
- Heat the water bath to 57 °C and then add the steak. Heat the steak for 30 minutes.
- Remove the steak from the bag.
- Dry the surfaces of the steak with kitchen paper.
- Sear the steak with a gas torch.
- Slice the steak with a sharp knife.
- Serve the lump of rump with a lump of butter.
Verdict
The steak was deliciously beefy and tender. It was perfectly cooked.
