Chuck steak

I bought two pieces of chuck steak for $AUD15/kilogram.

Ingredients

  • Chuck steak
  • Salt
  • Water
  • Butter

Equipment

  • Slow cooker
  • Gas torch

Instructions

  1. Unwrap the meat and season with salt.
  2. Leave uncovered in the refrigerator overnight.
  3. Put the meat into the slow cooker with half a glass of water.
  4. Cook for 10 hours.
  5. Remove the meat from the slow cooker and drain the excess fluid.
  6. Keep the cooking liquor in a bowl in the refrigerator. The beef fat can be used later. The gelatinous beef broth is good for cooking beef mince.
  7. Lay the chuck steak into an aluminium foil-lined baking tray.
  8. Sear the meat with a gas torch.
  9. Serve the meat on a plate along with some butter.

Verdict

The meat was falling apart. It was tender and beefy. The gas torch searing at the end helped develop a crust for mouthfeel.

    I’ve never tried gas-torching meat at the end of the cooking process. I’ll have to try it–it looks like it turned out nicely.

    Very nice Gary, uncovered meat in the refrigerator makes a huge difference but I’ve never tried it with chuck steak. A Great idea. I love your cooking techniques, this is a soft beef cut yielding great results.
