I bought two pieces of chuck steak for $AUD15/kilogram.
Ingredients
- Chuck steak
- Salt
- Water
- Butter

- Slow cooker
- Gas torch
Instructions
- Unwrap the meat and season with salt.
- Leave uncovered in the refrigerator overnight.
- Put the meat into the slow cooker with half a glass of water.
- Cook for 10 hours.
- Remove the meat from the slow cooker and drain the excess fluid.
- Keep the cooking liquor in a bowl in the refrigerator. The beef fat can be used later. The gelatinous beef broth is good for cooking beef mince.
- Lay the chuck steak into an aluminium foil-lined baking tray.
- Sear the meat with a gas torch.
- Serve the meat on a plate along with some butter.
Verdict
The meat was falling apart. It was tender and beefy. The gas torch searing at the end helped develop a crust for mouthfeel.
