You will have noticed that I haven’t posted much lately. My eating plan doesn’t change much day-to-day, so posting seems redundant.
I thought I’d share the myriad ways I’ve been enjoying steak. I cook most of the steak I buy at the supermarket in a frypan. I usually dry brine the meat by seasoning it with salt the night before I plan to cook it and then leaving it uncovered in the refrigerator overnight. I heat the frypan for a few minutes and then add the meat. I flip the meat every thirty seconds until a crust has formed. I then cover the meat with aluminium foil for three to five minutes before slicing it and serving it with salt.
If the steak is thicker, e.g., >4 cm thick, I may cook the meat in a water bath at 57 °C for between two and three hours. I’ll sear the steak in a hot frypan, barbecue grill, or use a gas torch.
You’ll see I’ve been eating thinly cut scotch fillet steak, standard cut scotch fillet steak, rump steak, porterhouse steak, and T-bone steak.
I hope you enjoy eating steak. It’s one of my favourite foods.

I need to learn to cook steak. Shoe leather isn’t great when it starts out as something one is supposed to eat! I can do cubed steak and skewered steak, but just steak isn’t as easy as it looks. Yours is beautiful!!

It’s taken me a while to get the knack of it.
The most reliable way for me is to:
1. Season the steak with salt and leave it uncovered on a rack in the refrigerator overnight.
2. Heat and frypan and cook the steak flipping it every 30 seconds.
3. Cook until it’s to your preferred doneness.
4. Cover the steak in aluminium foil for between 3 and 5 minutes.
5. Slice the steak and enjoy it.
Hey Gary – Thanx for the comments on my blog. I haven’t been doing new recipe posts yet (just doing re-writes and consolidations), but, when I do, they will mostly be vegetable, or fish/shellfish based, as that is the way I have been eating lately. I wouldn’t refuse a steak or other meat dish if offered to me as a guest somewhere, and I cook some red meat occasionally, but I will be explaining my dietary change in an upcoming post in the future.
