Poached salmon

This piece of salmon cost me $AUD6.75. It was $AUD30/kg.

I used beef broth to poach the salmon.

Ingredients

  • Salmon
  • Beef broth
  • Egg

Equipment

  • Frypan

Instructions

  1. Place the salmon in a cold frypan.
  2. Add about a cup of beef broth.
  3. Turn on the heat and bring the broth to a slow simmer.
  4. Poach the salmon for five minutes.
  5. Transfer the fish to a plate.
  6. Poach an egg in the remaining broth.

    That’s interesting: salmon poached in beef broth. I love that you topped it with an egg!

    Thanks, Jeff. I never have any fish broth and while beef broth seems odd, the flavours imparted are nice with the salmon.
    I like an egg with a runny yolk with flaky just cooked salmon.

    I’m so intrigued by poaching it in beef broth. I think it’s kind of genius! Do you get much beef flavour in it?

    Hi Lorraine, thanks. Yes, the flavour is a little beefy, but I think that’s better than the salmon flavour which sometimes can be a little too strong.

    Poaching the salmon in the beef broth and then topping it with an egg must give the salmon a totally different flavor experience.

    It did. The salmon tasted more savoury umami and less “fishy”.
