Chuck steak

I normally cook chuck steak at a low temperature for a long time, e.g., eight to ten hours. The meat falls apart and is easy to pull.

I wanted to try a shorter cooking time and see how much tougher the meat is and determine if it’s still palatable (at least to me).

Ingredients

  • Chuck steak — this steak cost me $AUD12.29 at $AUD24.00/kg.
  • Salt
  • Water

Equipment

  • Pressure cooker
  • Frypan — stainless steel

Instructions

  1. Unwrap the meat and season it with salt.
  2. Place the meat into the pressure cooker.
  3. Add ¼ cup of tap water.
  4. Cook for 20 minutes.
  5. Remove the meat and dry the surface with absorbent paper.
  6. Sear the steak in a hot frypan.
  7. Slice the steak.
  8. Serve the steak on a dinner plate.

    It does taste great when cooked that long. I know people who like to cook chuck steak by sous vide often keep it cooking for between 48 and 72 hours.

    I used to cook brisket in a pressure cooker and it always turned out very tender.

    So was it palatable with shorter cooking time? I bought chuck steak recently because that was the only thing available in Coles and Woolies at a reasonable price for the amount you get. I normally prefer to pan fry my steak, quick and easy but sometimes I really have to watch no to overcook it.

    I know that chuck can be cooked on a frypan but I’ve never been able to get a tender piece of meat that way.
    That’s why I prefer slow cooking or using a pressure cooker. Both methods result in a tender tasty piece of meat.

    Definitely agree with you. I find it hard to get chuck tender on a fry pan. I usually end up doing it very well done, sometimes bit too tough 😄 Keep doing your slow cooking, Gaz. You cook very well.
