The Breakfast of Champions

Pavlova and coffee

Growing up in Brisbane, Mum would almost always make a pavlova for Christmas. My standard Boxing Day breakfast was leftover pavlova. I know that sounds weird because who would have leftover pavlova. The thing is we would anticipate Boxing Day breakfast so we would save some.

I wasn’t with my family for Christmas 2019 but I’m here in Brisbane now. Mum made a pavlova yesterday and I made sure there was some left for today’s breakfast.

Christmas 2019

I ate well today.

Breakfast

Lunch

Lunch was an extravaganza of roast turkey with cranberry jelly and gravy, ham and hot English mustard, a spanner crab, mango and avocado salad, plus roast vegetables.

It was superb.

There were also smoked salmon blinis for an entrée and chocolate pudding for dessert.

Tea

For tea I enjoyed a light meal. It was spam, speck, peas, and cherry tomatoes.

Back “home” with steamed egg, melted cheese, and wilted spinach

Back from Norfolk Island

I’ve been working in Norfolk Island this week.

It’s good to be back in Canberra.

I said hello to Mr Belconnen Owl this morning.

Craving simple egg and spinach

I’ve been craving a steamed egg, wilted spinach and some melted cheese all week.

While in Norfolk Island breakfast consisted of toast and some tinned fruit.

It was good to get some of this in my belly this morning.

Eggs Benedict with bacon at Ricardo’s Cafe and Patisserie

I went out to breakfast this morning with a friend. Ricardo’s cafe is a popular place. The food is always on point. Even though it’s had some dramas with ACT Government public health officials making orders after a food safety notification a year or so ago, the business seems to be thriving.

This morning I enjoyed the eggs Benedict with bacon. The Hollandaise sauce is lovely and buttery and it gets soaked up so well along with a runny yolk, by the sourdough bread.

Happy Saturday eggs, cheese, and spinach

Happy Saturday

I went for my usual walk earlier.

Abandoned trolley

I then came across this abandoned shopping trolley at Margaret Timpson Park. It had an empty box in it for a vintage ‘ladies’ bicycle. It makes me wonder at the sort of person who would just littler like that.

Egg, cheese, and spinach

With a little Tabasco™ sauce for some added kick.

Steamed egg, melted cheese, and wilted spinach

So like I showed you yesterday, the whole steamed egg and wilted spinach is a thing with me.

This morning, I made a little mound of cheese on the spinach on which to nest my egg.

I broke the yolk deliberately before shooting the photograph so you can appreciate the oozy goodness of the yolk porn.
