Crispy pork belly with baby beetroot, sugar snap peas, mini asparagus, fennel, red onion, parsley, goat cheese, halloumi, lime juice, olive oil, and cherry tomato salad

I bought the baby beetroot ready to serve from Coles.

I cooked the sugar snap peas and mini asparagus in boiling water and flash cooled them in ice water.

The fennel and red onion were sliced thinly with a mandolin (using the safety guard).

The halloumi was washed, dried, and fried to remove any squeakiness.

The cherry tomatoes and pork belly were cooked in a hot oven for 40 minutes.

Spaghetti, creamed spinach, and eye fillet steak

For the first time in many years rather than buying Asian pasta, I bought some European pasta.

A simple meal tonight. I need to finish the leftover steak from last week. I also have some spinach left to finish too.

It’s an easy enough meal.

I boiled some water and cooked the spaghetti. After rinsing and draining the spaghetti I out it into a frying pan with some olive oil and butter and tossed it around a bit before adding in the spinach leaves to wilt. Add to the frying pan a dash of cream and a teaspoon of mustard for flavour and Bob’s your uncle. All I needed to do was toss through the thinly sliced steak, and dinner was ready.

Normally, I eat salmon on Monday nights but I bought two pieces this week.

Oven-cooked chicken wings, broccolini, kale sprouts, and cherry tomatoes

I felt lazy today. I had chicken wings and I had some green vegetables. I figured a one ‘pot’ meal was in order.

Deboned chicken thigh and drumstick with cauliflower, tomatoes, and avocado

Came home and didn’t feel much like cooking so I removed the bones from a chicken thigh and drumstick and put them into a baking tray. To that I added a piece of cauliflower plus some cherry tomatoes. I seasoned everything with iodised salt and black peppercorns which I’d ground in a mortar with a pestle.

I served it with an avocado cheek.

Last night I oven cooked a chicken thigh, tonight I pan-fried a deboned chicken thigh and deboned drumstick.

Chicken thigh schnitzel, steamed red cabbage, and cherry tomatoes

I bought a chicken thigh schnitzel from Belconnen Chicken earlier this morning. I pan-fried it in garlic butter and then tossed in some sliced red cabbage and cherry tomatoes, put the lid on to effectively steam the vegetables.
