Scotch fillet steak

I wanted to share a short post on tonight’s dinner.

Recipe

Equipment

  • Precision cooker
  • Water bath
  • Frypan

Ingredients

  • Scotch fillet steak
  • Butter
  • Iodised cooking salt

Instructions

  1. Season the steak with a liberal amount of iodised cooking salt.
  2. Dry brine the steak overnight and then place in a vacuum bag.
  3. Evacuate the air from the bag and seal it.
  4. Cook the steak at 57 °C for 2 hours.
  5. Remove the steak from the bag and dry the surfaces of the steak with paper towels.
  6. Sear the steak in a hot frypan and baste with butter.
  7. Remove the steak and pour the burnt butter into a small pot.
  8. Dissect the longissimus from the spinalis muscles.
  9. Slice the longissimus and lay on a wooden board.
  10. Salt the steak.
  11. With chopsticks 🥢 dip the steak into the burnt butter and eat happily.
